Festive food round up - sweet

I guess that maybe you've finished most of your shopping by now but if like me you have to pop to the shops quickly tomorrow to get some extra stuff then why not try some of these.

Tomorrow is Christmas Eve and here in the BNM household we have a few more things to bake.
Luckily I have some great products in my cupboard to so with:

Kerrygold Butter

Kerrygold Irish Butter is great to cook with as its now softer even when kept cool.Great for making mince pies or cheese biscuits with. (and as its so soft it means I don't have to soften it up in the microwave if I forget to take it out!)


Vanilla extract
Another thing of course is making sure that Santa has the right biscuits to eat with his drink (port in our house). We may give him some mince pies but if not then some vanilla cookies may also go down a treat! I make these using :



Nielsen- Massey vanillas have been made since 1907 and we've found a great drink that you can make to keep you warm on these cold and wet Christmas Holidays.

Ingredients

1 cup of milk
1 tsp sugar
1/2 tsp Nielsen-Massey vanilla extract
Cream and marshmallows to serve (optional)
Method
Warm milk and sugar in microwave until hot (not boiling) (this depends on the size of the cup you use)
Remove from microwave and add vanilla. Stir. Serve with whipped cream and marshmallows

You could also add the vanilla to your mince pie recipes (as EricLanlard, master Patissier suggests).

Cocoa

If your feeling even more like baking tomorrow then don't forget a great pudding for those that don't like Christmas pudding (apparently 49% of us don't even eat it!). This pudding is of course the Yule Log. When making Yule Log its best to ensure you have a good quality cocoa 

We've been using this great tasting fair trade cocoa in all our chocolate baking recently and it tastes fantastic. The smell when you open the tin makes you feel warm inside and its great in my chocolate spread muffins (something else to put on Santa's plate). The cocoa is available in Sainsburys and is also great as a drinking cocoa too.

That's probaly enough sweet things to keep us all happy. I hope you have a merry christmas and BNM will not take any reponsibility if you get fat!
