Probably Guilty?

I always thought there was either Guilty or Not Guilty. I mean isn't the law meant to be black and white, meant to tell us what is right and what is wrong.
So, why is that someone can plead Not Guilty but then have his barrister say he was probably responsible?
I am confused and angry at the fact that anyone can do such a thing? Why can't he put his hands up and say "You got me" and then let the family know where she is. Let them bury her and mourn her loss with the knowing that she is now gone.
My hearts go out again to April's family and to the not knowing.
