Butterscotch Biscuits

For some reason there is always a packet of cereal in our house which although opened has then been neglected and sits in the cupboard forlornly.

I found some rice crispies in the cupboard on Monday so looked in my cookery books for something to make and we decided on some biscuits because you can never have enough!

Butterscotch biscuits

2tbsp Golden Syrup
4oz unsalted butter
4oz light brown sugar (I used golden caster sugar  and it worked!)
6oz self raising flour
1oz rice crispies (apparently there weren't quite enough so I used some cocoa pops too!)
Chocolate chips for decoration 

Beat together butter, sugar and golden syrup until smooth.
Mix in flour then fold through rice crispies
Form into walnut sized balls and place on buttered baking tray , flatten down.
Decorate with chocolate chips (or in our case hearts).
Bake for 15-20 minutes until golden.
Leave on sheet to cool for 1 min then transfer onto wire rack.

And voila there you are - very yummy biscuits which won't last us long!
Their great with coffee.

Note mine may be bigger than stated as I can never work out how large a walnut is!
