and some soup...

While on the cooking roll last night I also made some yummy soup for today's lunch (I've just eaten it was delicious). I love soup and it was great in this wintery and wet weather we're having.

Leek and Butter Bean soup

4oz unsalted butter
1 carrot- sliced
2 leeks - washed and sliced
900ml vegetable stock
1 tin butterbeans
Seasoning

Melt butter in pan and saute vegetables for 5 minutes (or until soft)
Add butterbeans and cook for further 5 minutes, stirring occasionally
Add vegetable stock, bring to the boil and simmer covered for 20minutes.
Allow to cool for a bit then blend.

Reheat when needed
