And more biscuits - Peanut Butter Cookies
After making the Viennese biscuits, I decided that we didn't have enough so made some other kind.
Again another recipe from my trusted book so again I don't know where it came from. But these biscuits are delicious and though they may be small they are just enough to have with a mug of coffee.(although after eating one you do tend to want 2 or 3 or....)
Peanut Butter Cookies
Ingredients
8tbsp plain flour
2 tbsp caster sugar (I did add a bit more as we like them sweeter)
2 tbsp crunchy peanut butter
1 egg yolk
50g softened butter
Method
Preheat oven to Gas Mark4
Mix all ingredients together to form soft dough. It is a very crumbly mix and will only just stay together.
Break pieces off dough and roll into walnut sized ball.
Place on baking sheet (covered in the white greaseproof paper or buttered)
Flatten balls with a fork and then bake for 10mins
Transfer onto wire rack to cool
Eat!
